Salt Flats
The Salt Flats (Saline di Trapani) in Sicily were an amazing example of how salt used to be (and there still is) harvested. The wind mills move the water from the sea to increasingly shallow areas. The wind and the sun help move the evaporation along until it's mostly salt. As the process unfolds, the water changes color.
